Romesco - a Catalan classic, based on pulverized almonds, dried sweet pepers and tomatoes. The name Romesco is also used for a variety of pepper, small, ruddy-red, sweet, and medium mild, hence the name of the sauce. Traditionally it is used with fish or shellfish, but also works great on Pork, minced beef and even scrambled eggs.
