About one quarter of all olive oil in the world is produced in the Andalusian province of Jaén. Not far from the spectacular mountains of the Segura National Park where the Guadalquivir river originates and near the ancient city of Úbeda, also called the world capital of olive oil.

It's here that Can Solivera produces its Wild Organic 1st Cold Extraction extra virgin Olive Oil.
Arbequina trees are relatively recent in Jaen, as farmers started to replace Picual trees (covering 85% of Jaén’s olive tree areal) by this variety only late last century. But the grove is situated at an altitude of 600 metres and there is no incidence of Dacus Olei, the infamous white fly which terrorizes organic olive farmers at lower altitudes.
Equally important is the soil condition and micro-climate. And critically, a very early moment of harvest combined with a first cold extraction at a controlled, very low temperature of 19ºC (max) make this oil one of the fruitiest Arbequina oils available anywhere.
Our Wild Organic Olive Oil 1st Cold Extraction olive juice is obtained through a first cold mechanical extraction by means of a modern centrifuge at a controlled temperature of max. 19º C.to retain as much as possible of the original scent and taste. A second centrifuge helps to separate the oil from the juice (alpechín), making use of the difference in specific gravity.
We offer this very fine oil in a variety of containers from the 25cl glass bottle that makes a great gift, to the larger-sized 3 litre tin.
